Bamboo biryani is
usually served as semi cooked rice and meat marinated with spices that are
stuffed into bamboo tubes hollow. Each
type of biryani has its own flavour because different spice paste is used for
each of them. First, a bowl of high quality Pusa 1121 Basmathi Briyani rice is
stuffed into the bamboo tube. Then, the meat items are layered on top of the
rice. Lastly, another layer of biryani is added and the tube is closed with a
banana leaf so that the steaming moisture doesn’t ruin the real taste of
biryani. The bamboo tubes are then placed into a big cauldrons with high
temperature water.
Malaysian Lemang cooking method has inspired Stellamary to start off this concept for her restaurant. She experimented cooking biryani just like lemang in bamboo tubes for a few months and finally achieved her goal. She was determined to come up with biryani flavour that can satisfy the Malaysian’s taste buds. There are no added colouring and preservatives used during the preparation process.
