Ah Chuan Fish Soup is a stall that sells, you guessed it, fish soup inside Restoran Shang Ji in Bukit Chagar, Johor Bahru. The small stall is the brainchild of Ah Chuan, who has worked in other fish soup places with hope to operate his own. Helped by his brother, Ah Chuan believes in serving the best quality to his customers. Ah Chuan only serves high grade fish like black snapper, red snapper and grouper.

Knowing that some customers might want variations of his fish soup, Ah Chuan sets three styles of fish soup at his stall. Customers can choose to get a fish slice, fish head, or fish ball soup, that comes with either thin rice noodles (mee hoon) or flat rice noodles (kuey teow). Whether you get the fish slice soup or the fish head soup, a few balls of fish would still make their way into your piping hot bowl.

The fish balls are handmade only by using fish that resulted in a less bouncy texture than the usual processed fish balls. Ah Chuan only uses fresh fish, bought straight from the market every morning before opening his stall. If say the fishes at the market are not fresh, Ah Chuan would not open his stall for the day. So, no worries about quality drop or whatnot and be confident that if you get a bowl of soup from Ah Chuan, it is the best possible version.

The soup is made only with fish bones, chicken bones and anchovies without the use of pork in order to attract a wider audience. While the soup remains clear, it does not lack any flavour as Ah Chuan uses dried flat fish fillets that are cut into small pieces, deep fried then grounded to be seasoning. Each bowl is served with a side of bird’s eye chilli for that extra kick.
