Windmill’s Signature Soft Shell Crab came buried in ample amount of egg floss, so much so that you can barely see the crabs at first sight. As you dig through the egg floss, you will see that the crabs come in a generous portion. They are fresh, with a taste that will remind patrons of the ocean. The shell is crispy but soft at the same time and the meat is sweet and soft. The egg floss carries a strong, tantalizing butter scent and is garnished with curry leaves and chili. Combined with the crab, it will definitely lead to an explosion of flavour on your tongue. An array of vegetables including lettuce, shredded carrots and shredded radish are served at the sight to cool you down and give you your dose of fibre.
