Yap Chan Fish Head Noodle @ Restoran Vest Inn
Unlike your average fish head noodle variety, Yap Chan’s version uses deep-fried salmon fillets. The fish is flaky and smooth on the inside, while crispy enough on the outside. The milky broth is thick and flavourful. Best of all, it doesn’t have the typical fishy smell! Completing this delectable dish is an appetizing mix of tangy tomatoes, silken tofu and bok choy (Chinese cabbage).

The broth has a nice savoury-sweet flavour of evaporated milk mixture, and tastes appetising enough to make you lick the bowl clean! If you fancy some fiery hotness along with soury flavour, you may go for the tom yam flavoured noodles.
