Sala Sabaii
Being a Thai restaurant, having grilled fish is a common thing to have. Like many other out there, it is done with a salt-crust by the skin over a charcoal grill. Once the fish has been cooked, the skin will then be removed to reveal the juicy flesh within. Of course, the skin is not meant to be eaten, but for those rebels, you could definitely do it as it does possessed a good amount of saltiness and flavour.
