The most obvious thing to note about the New York cheesecake from Rach is that it's plated very well. The sides are cut perfectly even, the glaze on the top is well coated with no spills on the side of the cake. As far as textures are concerned, the cheese base is very smooth and creamy, which work well with the drier and more crumbly nature of the cake base. This combination sets up a rich dish. In terms of flavour, there is a great balance of sweetness and richness within the cheese base.
